The Ovolution system, available in capacities from 300 to 2,000 liters per hour, is a completely integrated egg processing system where all steps of liquid egg processing such as egg breaking, blending, pasteurizing, packaging and CIP cleaning are incorporated. The system is factory pre-assembled on a stainless steel skid for a quick and easy installation and can be installed in a small room adjacent to the grading operation, with a conveyor directly from the grading machine to the egg breaker.

Modern pasteurizing method
As stated, Ovolution handles every step of processing. The egg breaker receives and breaks the eggs and the raw egg product immediately enters a blending tank to create a homogeneous mix. By pasteurizing the eggs, the risk of food-borne illness in dishes that are not cooked or are only lightly cooked is reduced. The Ovolution system uses a pasteurizing technology where the filtered liquid raw egg is heated up to pasteurizing temperature for the necessary time to eliminate bacteria and then immediately cooled down under 4 degrees Celsius and sent to the filling and weighing station. By using this modern technology, the highest bacterial reduction is obtained for a longer egg product shelf life. The time it takes a broken egg to be pasteurized and packed is less than 20 minutes. As a result of this, high-quality egg products can be produced with a very simple and compact system.
